A BUTCHER has reassured customers changes have been made to his business after being prosecuted for food hygiene offences.

Gerald Williamson, owner of Carters Butchers, in Yarm Road, Darlington, appeared at the town’s magistrates’ court earlier this week where he was fined £1,600 for two offences of failing to keep the premises and equipment clean.

He must also pay an £80 victim surcharge as well as £500 costs.

The prosecution followed a routine inspection on April 24, and Mr Williamson has reassured customers changes have been made to the business since the inspection.

“We have taken this very seriously,” he said. “We had a manager running the shop for us at the time and he didn’t do his job properly. I wasn't in the shop on the day of the inspection.

“He left immediately after the inspection and I am now in the shop every day.

“We addressed the issues straightaway and there have been a lot of changes made to the premises – it has been revamped.”

Councillor Chris McEwan, cabinet member economy and regeneration said: “The vast majority of catering premises in Darlington comply with food hygiene legislation and respond positively to advice they are given.

“However, if they fail to meet these standards, we will take action to protect the health of the public.”
