Whitby smoked salmon to be served up in top London restaurant.

AN AWARD-winning fish merchant on the North Yorkshire coast is celebrating after one of London’s top restaurants is going to serve up one of its specialities.
Whitby Seafish, based in Staithes for the past 20 years, will have its oak roasted salmon on the menu at the renowned Hix restaurant, champagne and caviar bar in Selfridges.
The restaurant, owned by Mark Hix, became aware of the Staithes’ speciality salmon thanks to former local man James Coward who is best friends with one of the restaurant’s chefs.
A supply of the oak roasted salmon – which was shortlisted for a DeliciouslyYorkshire award for best fish and seafood product in 2011 missing out on the top prize to their other product, the Oak Smoked Salmon – was later ordered for the city restaurant.
Despite the restaurant having its own smokehouse, they called for more of Staithes’ smoked fare and the team of chefs is currently working out how to fit it into its menu.
Vicky Dixon, who runs the Staithes business with Matthew Asquith, is excited at the prospect of some of their handiwork being sampled by customers in the capital.
“It is great news. The chef said he thought it tasted fantastic and has even ordered some for himself.
“We’re waiting to see what they will do with it – whatever they do, I’m sure it will taste great.
“We really are delighted to have some of our produce available in such a renowned restaurant.”
Ms Dixon and Mr Asquith added a smoke house to their operation a couple of years ago and have not looked back since.
